Chocolate Chip Cookie Ice Cream Sandwich: Bake-Along Edition

Everyone loves to chomp on ice cream sandwiches by the pool on a hot summer day, but why not enjoy these delectable treats all summer long with this easy-to-follow recipe? With this bake along, you can make amazing ice cream sandwiches of your own.

The ingredients you need to bake the chocolate chip cookies:

  • 1 ¼ cup of all-purpose flour

  • ½ teaspoon baking soda

  • ½ teaspoon salt

  • 7 tablespoons unsalted butter-Room temperature

  • ¾ cups brown sugar-Packed

  • 2 tablespoons granulated sugar

  • 1 egg-Room temperature

  • 1 teaspoon vanilla extract

  • 1 cup of chocolate chips

  • Ice cream of course!

To begin, preheat your oven to 350 degrees. Line a baking sheet with parchment paper or spray your sheet with nonstick spray. In a bowl, mix together the flour, baking soda, and salt.

Mix together the butter, brown sugar, and granulated sugar until it's fluffy and light. Add in the egg and vanilla extract and mix again for 20-30 seconds. I do not have a stand mixer, so I went back and forth between my handheld mixer and a spatula/spoon.

Next, slowly mix in your flour mixture to your wet ingredients. Make sure to not overmix. Add in chocolate chips with a spatula.

Lastly, roll your dough into balls and place them on your cookie sheet. Make sure to count out how many you have because you need 2 cookies to make one sandwich. Bake for 12 minutes. Let your cookies cool, then put them in the freezer for 20-30 minutes.

The assembly process is very easy. Just put in a scoop of your ice cream and smoosh two cookies together.

And there you have it: ice cream sandwiches made in your very own home! This recipe can be difficult to pull off, but it is totally worth it!
